Work and experience are at the heart of the whole process that makes our olives change into precious extra virgin olive oil. These olives are picked by hand directly from the tree, at the right ripening time, then brought to the company’s oil press for defoliation and accurate selection.
The Turning Stone
Thanks to the millstones made of granite, also called “molazze”, within twelve hours the pressing of the olives is done, as the best oil tradition teaches. The olive paste goes through, with great care, all the succeeding steps of manufacturing, from the olive press to the final bottling.
